docs: update README/AGENTS for current codebase

- All references updated from fetch → akai-fetch
- AGENTS: document golangci-lint, extract.go replaces bash,
  remove findScript, update Electron binary name
- README: update roadmap, extraction tech stack
- mise.toml: add golangci-lint tool
